Vegetarian, Vegan, Dairy-free in Nelson

This final week of focus on the vegetarian, vegan and dairy-free aisle, highlights a few different brands, Tofuti Cream Cheese, Alamir Falafel and Living Goodness Krauts. When these are combined with my sundried tomato pesto recipe, they come together to make one delicious wrap.

For the Pesto

1 C sundried tomatoes (drained from oil)
1/2 C oil from sundried tomato jar
3 cloves garlic, crushed
1 Tbsp nutritional yeast, optional
1 C roasted almonds
Salt to taste

To make the pesto combine sundried tomatoes, oil, garlic, nutritional yeast and roasted almonds in a food processor and pulse until the mixture is combined but still slightly chunky. If it looks a little dry add some extra oil. Taste and season with salt.

To Assemble the Wraps

1 pkt wraps
1 pkt Alamir falafel bites
Tofuti cream cheese
Lettuce greens
Living Goodness Sauerkraut or kimchi

Preheat your oven to 200c and then bake the falafel bites for ten minutes. Fill the wraps with a spread of the cream cheese, sauerkraut (or kimchi), greens, falafel and dollops of the pesto. Roll up and enjoy!
