This week, our Fresh Choice Nelson guest blogger, Paula, is embracing the warmer weather. Everybody loves a frozen treat in the summertime, so Paula’s talking ice cream, ice blocks and nice cream.
Summer feels like it has arrived in Nelson. We will soon enjoy the abundant fresh summer produce as it finds it’s way on to the supermarket shelves.
I love the array of summer berries and fresh greens available at this time of year. It’s the season where we lighten up our meals and look for refreshing dishes bursting with summer flavours. It’s also the season for ice cream and ice blocks.
I have a couple of recipes to share with you. One for a (n)ice cream and one for ice blocks. Both will keep kids and adults happy, they are low in sugar and use natural fruits and vegetables for nutrients and flavour.
First up forget the ice cream and whip up this delicious nice cream instead!
Fresh Raspberry and Coconut Nice Cream
Ingredients
- 1 cup of fresh raspberries (or you can use frozen)
- A can of very thick coconut cream (Little Bear works a treat)
- 1 tsp of vanilla paste
- A little sweetener (optional)
Method
Remove the coconut cream from the can and place it in the freezer until frozen. Then, place all the ingredients in a blender until smooth and creamy. Serve immediately.
Mint, Spinach and Kiwi Ice Blocks
Ingredients
- 2 cups of coconut water
- 2 gold kiwifruit
- 1 cup of baby spinach
- 3 mint leaves
Method
Place all the ingredients in a blender and pour into ice block moulds. Freeze and enjoy.
